Creamy Chicken and Vegetable Soup

Ingredients

¼ cup butter
1 medium onion, diced
3 large carrots, diced
2 ribs celery, diced
6 tablespoons flour
6 cups chicken broth
1 cup frozen peas or green beans
2-3 cups cooked chicken
1 cup heavy cream

Directions

In a large pot, melt butter over medium heat.  Add onion and sautee until tender, about 4-5 minutes.  Add flour to butter and onion and stir to combine.  Let cook for 1-2 minutes, being careful not to let the flour mixture burn.  Add the chicken broth, carrots, celery, green beans, and chicken to the mixture and simmer 10-15 minutes.  Once vegetables are tender, add the cream and allow to simmer for a few minutes more.
