Chicken Curry

Ingredients
1 pound skinless, boneless chicken breasts or chicken breast tenders
3/4 cup chopped onion
1-1/2 teaspoons minced garlic
3/4 teaspoon minced fresh ginger root
1-1/2 teaspoons curry powder
3/4 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
1-1/2 teaspoons water
1 whole tomato, diced
1/2 cup plain yogurt
¾ teaspoon salt
1/4 cup water


Directions
Broil chicken breast tenders on baking sheet in oven for 6-8 minutes, turn, then continue to broil for another 6-8 minutes.  Meanwhile, sautee onion, garlic, and ginger in a skillet over medium heat until tender.  Add in curry powder, cumin, turmeric, coriander, and water.  Let cook for 1 minute so that the flavors combine.  Add in the chopped tomato, yogurt, salt, and water.  Stir well.  Add in the cooked chicken breasts and simmer 5 minutes.  Serve over rice.
